Pirate Punch

Recipe Source Marie Claire food+drink Michelle Cranston
Serves 8
Ingredients
2 Cups peach nectar ( I managed to get a pear and grape juice)
200ml dark rum
1/4 cup lime juice
3 White peaches peeled and finely sliced (I use a tin in natural juice)
75ml ginger syrup*
1 Cup chopped fresh pineapple pieces
1 litre ginger beer or ginger wine
fresh lime and mint to garnish.

Place all ingredients except the garnishes into a large serving or punch bowl and stir well. Garnish with thinly sliced lime and torn mint leaves,

Cosmopolitan Champagne

In celebration of Girls Night In and think pink month for breast cancer awareness our 12 hour crop tomorrow and tonight as a treat we have enjoyed a glass of Cosmo Bubbles....oh so YUM!!

Preparation Time 5 minutes
Cooking Time 10 minutes

Ingredients (serves 6)
  • 250ml (1 cup) cranberry juice
  • 2 tbs Cointreau liqueur
  • 2 tbs fresh lime juice
  • 6 sugar cubes
  • 1 x 750ml btl chilled pink Champagne or sparkling wine
Method
  • Place cranberry juice in a medium saucepan and bring to the boil over high heat. Cook, uncovered, for 10 minutes or until reduced by two-thirds. Remove from heat and set aside for 30 minutes to cool.
  • Combine the cranberry juice, Cointreau and lime juice in a small jug. Place a sugar cube in each serving glass. Pour the cranberry mixture over the sugar. I doubled this mixture and put into a bottle so it was on hand for tonight and tomorrows crop. I think this would also make a nice premixed gift pack...for christmas just another idea!!!

    Top with Champagne or sparkling wine and serve immediately.

Mojitos


YOU WILL NEED

  • 10 fresh mint leaves
  • 1/2 lime, cut into 4 wedges
  • 2 tablespoons caster sugar
  • 1 cup ice cubes
  • 45ml white rum
  • 125ml soda water

Method
  1. Place mint leaves and 1 lime wedge into a glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture.
  2. Fill the glass almost to the top with ice. Pour the rum over the ice and fill the glass with soda water. Garnish with the remaining lime wedge.
