Cookies & Cream slice

Recipe Cooked by Dylan at Forest High School.....oh this was YUM!!! We will be making it again.

  • 350g Oreo biscuits (with filling)
  • 150g unsalted butter (melted)
  • 2tsp powdered gelatine
  • 400g cream cheese
  • 300ml Thickened cream
  • 1tsp vanilla extract
  • ½ cup (110g) caster sugar
  • 200g white chocolate (melted, cool slightly)
  • Melted dark chocolate to drizzle
1. Line a 4cm deep 18cm x 25cm lamington pan with baking paper.

2. Place 250g of the biscuits in a food processor until fine crumbs. Add melted butter process to combine, then press into the base of the pan. Chill for 20mins.

3. Sprinkle the gelatine over ¼ cup. Place cup in a saucepan of gently simmering water and stir the gelatine until dissolved.

4. Place the cream cheese, cream, vanilla extract and caster sugar in the bowl of an elective mixer and beat until smooth. Stir in the gelatine mixture and the melted white chocolate.

5. Roughly chop the remaining biscuits and stir through, then pour the cream cheese mixture over the chilled base, Return to the fridge to set overnight.

6. Drizzle with the melted dark chocolate, then return the slice to the fridge for 15 minutes until set.

7. Slice in the pan and serve
